Our story

Little Green is a family owned market garden located in Põlvamaa in Southern Estonia. We specialise in lacto-fermented products and vegetables grown by organic principles. 

We consists of: 

  • Lars, the husband, responsible for the growing of vegetables and making fermented products. 
  • Eva, the wife, responsible for the kimchi making. 
  • The four children who help with whatever they can.

During the season of 2025

We are developing the following:
  • sauerkraut spiced with caraway seeds and juniper berries
  • fermented pumpkin spiced with cloves, garlic and ginger
  • fermented hot sauce based on red jalapeños and garlic (similar to sriracha)
  • baechu-kimchi (temple style, spicy)
  • beak-kimchi (white, non-spicy)
  • fermented tomato sauce
In the garden we are focussing on growing:
  • tomatoes
  • head lettuce
  • zucchini / courgette / summer squash
  • cucumbers
